Not only does the Raveneau family own many of the finest sites in the appellation, but their wines have a steely magnificence that captures the essence of Chablis’ distinctive terroir. The greatness of Raveneau’s Chablis has even led some to suggest they deserve an appellation of their own.
Raveneau wines are famous for their longevity. In fact, many believe that a top Raveneau Chablis doesn’t hit its stride until it’s at least 8 to 10 years old. At this time, the wines not only acquire even greater richness, but layer upon layer of previously hidden flavors are revealed.
Along with René and Vincent Dauvissat, Raveneau pioneered the use of Côte d’Or winemaking in Chablis, including barrel fermentation and extended lees contact.

A more reserved nose grudgingly reveals its aromas of mineral reduction, essence of green apple, lemon-lime and a variety of Chablis elements that include iodine, tidal pool and quinine along with moderate wood. There is excellent volume to the intense, detailed and tautly muscular flavors that display superb length on the balanced, youthfully austere and dry finale. This powerful and compact effort is flat out terrific and while it can’t match the refinement of the Montée de Tonnerre, it is just as complete. If you can find it, buy it.

The 2020 Chablis 1er Cru Butteaux is lovely, unfurling in the glass with aromas of pear, orange oil, lemon, freshly baked bread, beeswax and oyster shell. Medium to full-bodied, taut and structured, it’s a serious, concentrated wine with a lively spine of acidity and a long, mineral finish.
