The 2007 Salon is just starting to show the first signs of aromatic development and nuance, as well as a touch more body than it did upon release. Rich, creamy and ample, with stunning textural richness and freshness, the 2007 is incredibly expressive today, certainly much more so than it was upon release. The 2007 is a dark horse Salon that keeps getting better with time. This is a fabulous showing.

The superb 2007 Brut Blanc de Blancs Le Mesnil wafts from the glass with a beautiful bouquet of crushed chalk, lemon oil, crisp green apple, white flowers and brioche. On the palate, it’s medium to full-bodied, taut and incisive, with bright acids, a tight-knit core and a brisk mousse, concluding with a long, chalky and bone-dry finish. After the comparatively broad and fleshy 2002, 2004 and 2006 vintages, the 2007 Salon seems to mark a return to a racier, more precise style—though admittedly that’s in keeping with the style of the vintage—that makes me anticipate the release of the 2008 all the more eagerly.

Lovely forthright fruit – mandarin, nectarine. Butter and salt too, with a very open, fleshy palate, which is lighter than the nose indicates. Excellent savoury snap on the finish, with yeastiness that waits right until the finish. An aristocrat in the making.
